One of the best ways to stay cool during the summer is this Persian cold yogurt soup called Abdoogh Khiar. This delicious yogurt soup is made with simple, natural and healthy ingredients and is ready in just 15 minutes.
Yogurt is a big part of Persian and Mediterranean cuisine, and Iranians love to add to their diet, such as basic homemade yogurt and cucumber yogurt dip.
Yogurt (particularly plain) can help keep your body cool on hot summer days. The same goes for cucumbers. This combination has long been loved and made by many people around the world, including the Turks of Cacik and the Greeks of Tzatziki.
Doogh refers to buttermilk that comes from the process of stirring yogurt butter, but this dish is often prepared with a mixture of yogurt and water. Here, tangy and creamy buttermilk is blended with plain yogurt for extra body soup. A cool, crispy, sweet, an array of sweet ingredients, along with herbs and spices, is then added to the base for a refreshing and satisfying meal.
This yogurt dish also includes cucumber, dill, mint, raisins, walnuts and rose petals, which can be diluted with water or ice cubes.
It is a highly aromatic and flavorful dish, healthy and protein-rich dish, perfect for vegetarians. Adding raisins adds a touch of natural sweetness, and walnuts adds crunch.

Plain Yogurt: Persian yogurt is naturally “sour” than the yogurt you find at regular grocery stores. You can make yogurt or use store-bought items. Persian Cucumber: Normal or English cucumbers can be used. Please remove the seeds. Raisins: Dark red raisins are usually used, but green raisins are also available. Walnuts: If you don’t have walnuts, you can substitute chopped pecans or pistachios. Herbs: The dill and mint combination is perfect, but you can use either exclusively. Fresh or dried herbs are available. Dried Rose Petals and Rose Water: This is optional. Rose petals offer colour and a very mild fragrance. Rosewater offers more aroma. Salt and pepper ice cubes or cold water: You can thicken or thin this depending on your preference and the thickness of the yogurt you are using.
To eat Abdoogh Khiar, you can tear the bread into a bowl and soak it for a few minutes. Next, enjoy the cold yogurt soup with a spoon. Each spoonful has a bit of everything, including a yogurt base, walnuts and raisins, herbs, bread and more.
